Loan has lived in the Southwest for the last five years. She is a

senior at the University of California at Santa Barbara with a major

in biology. Loan’s parents are from Vietnam. She has four brothers.

This recipe is a favorite quick meal prepared at college.

 

SHRIMP IN UDON NOODLES

 

Medium shrimp (about 10)

2 tablespoons olive or vegetable oil

2 clubs of garlic

5 tablespoons oyster sauce (lee kim chee brand recommended)

14 ounces (2 bags) precooked udon noodles

crushed peanuts (for garnish)

cilantro (for garnish)

 

Stir fry the garlic in olive or vegetable oil. Let sizzle for 30 seconds.

Add the shrimp and cook until shrimp is pink. Add the oyster sauce

and stir well. Add the udon and stir evenly. Put in serving plate or bowl

and garnish with the crushed peanuts and chopped cilantro.
