Southwest resident Bertie Warren is a retired teacher and author of a children’s book coming out soon. She’s taken classes at Cafe Med and has cooked forever. She said this is easy but tasty!

Pasta Bolognese
•    1 pound lean ground beef
•    2 tablespoons olive oil
•    1 large onion
•    2 stalks celery
•    1 carrot
•    4 ounces smoked ham
•    1 cup water
•    3-4 canned whole tomatoes or 3 tablespoons tomato puree
•     2 cloves garlic
•    1 teaspoon thyme
•     1 teaspoon salt
• 1/3 cup white wine or chicken broth
•    10-12ounces spaghetti or other pasta
Saute ground beef in 1 tablespoon oil until meat is done. Transfer to a pan.
Peel and chop onion. Dice celery and carrot.
Chop ham into small pieces. Saute in remaining oil with onion, celery and carrot. Transfer to pan with ground beef. Combine.
Add water, tomatoes, garlic, salt, pepper and thyme.  Cover and cook for about 20 minutes. Add wine or chicken broth. Cook for a few minutes.
Cook pasta, drain well. Serve immediately with sauce.
Makes four servings.
