Johnnie has lived in the Southwest for the last 14 years. She has two children, five grandchildren, eight great-grandchildren and two great-great-grandchildren. This recipe for peanut butter cookies came from a friend and is a quick and easy favorite for the children’s lunch boxes.

 

PEANUT BUTTER COOKIES

 

1 cup sugar

1 cup peanut butter

1 egg

¼ teaspoon vanilla

 

Mix all ingredients together until well blended. Put on cookie sheet one

tablespoon for each cookie. Using a fork dipped in sugar, flatten cookies lightly in a cress cross pattern. Bake in a 350-degree oven about 10 minutes or until lightly browned around the edges.
