Twelve years ago, Nancy Cristallo opened Sorella Ristorante Italiano in the Southwest. Other members of Nancy’s family own Rosa's Italian Restaurant in east Bakersfield and another Rosa’s in Pismo. Nancy’s daughter, Laurel Cristallo, serves as Sorella’s chef. The mother and daughter said this capelini serves as a simple and tasty summer dish.

Capelini Al Naturale
Makes 2 servings

Capelini pasta with tomatoes, garlic, fresh basil, wine and olive oil.

5 cloves of garlic, chopped
4 tablespoons of olive oil
3 Roma tomatoes, diced
1/4 cup white wine
6 basil leaves, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic powder
1/2 pound capelini pasta

Sautee garlic and olive oil in a pan until golden brown, add tomatoes, white wine, spices and fresh basil. Simmer for two minutes. Boil capelini for 5 minutes, strain and put in a bowl, then add your sauce.
